INGREDIENTS:
1 cup cooked ham, cut in julienne strips
1/4 cup sliced green onion
1/2 cup chopped green bell pepper (half red bell pepper for more color)
2 tablespoons butter or margarine
2 tablespoons flour
4 hard-cooked eggs, sliced
2 cups milk
Baked puff pastry shells or hot cooked rice
1 1/2 cups cooked asparagus, cut into 1-inch pieces
PREPARATION:
Place a large skillet on fire over medium high heat. Put butter or margarine, when it is hot put ham and cook till lightly brown. Add onion and green pepper and cook stirring intermittently. When the vegetables are tender add flour ad stir. When the flour is completely absorbed and the mixture is smooth, remove from heat.
Add milk a little at a time with constant stirring the mixture. When it is thick and smooth add eggs and asparagus and place the skillet and reheat. Serve over hot cooked rice or puff pastry shells.
